I receive many requests from my visitors for some recipe of their choice. I used to email the recipes or solution to their queries personally. But suddenly it struck me that why not let everybody know? All of my viewers should benefit.

This realization made me design this special section, where all my responses to viewers’ requests would be displayed for everybody to see.

Request 17 :-  Do you know how to make spicy peanuts? If you do, can you write me the recipe? You know what I mean? The one hawkers sell in India. Spicy, hot peanuts. Here in UK, you get salted one in Supermarkets unless you drive along few miles in Indian grocery stores.

Response : No my dear, its not me but your sheer passion to learn that helped you gain confidence in cooking.

  • VEGETABLE GRILLED SANDWICH
  •  
  • Ingredients:
  • Bread - 4 slices
  • Butter - 4 tsp
  • Cucumber, chopped - 1
  • Tomato, chopped - 1
  • Potato, boiled, chopped - 2
  • Onion, chopped - 1
  • Capsicum, chopped - 1
  • Ginger-Chili paste, optional - 1 tsp
  • Salt - to taste
  • Pepper powder - to taste
  • Lemon juice - 1 tsp
  • Cheese, optional - 50 gms
  •  
  • Method:-
  • Evenly spread the butter over the bread slices.
  • Mix all the ingredients except cheese in bowl.
  • Spread the mixture evenly on two of the slices.
  • Grate the cheese and spread over the mixture.
  • Cover it with the buttered bread slice.
  • Grill them over 180C for 10 minutes or as per the instructions of the specific griller.
  • Serve them hot with any green chutney or ketch-up.

    Response : You being an expecting mother, it is always recommended to eat as fresh as possible. Among the two recipes provided,  Orangey Carrot Cup cakes can be stored for 3-4 days.

  • ORANGEY CARROT CUP CAKES 

    • Ingredients:
    • Butter, softened - 100 gms
    • Castor sugar - 100 gms
    • Eggs, beaten - 2
    • Refined flour - 100 gms
    • Zest of orange - 1
    • Carrot, finely grated - 1
    • Sultanas - 50 gms
    •  
    • Method :
    • Heat oven to 180 C and line a 12-hole bun tin with paper cases.
    • Beat together the butter, sugar, eggs, flour and orange zest to a smooth mix, then stir in the carrot and sultanas.
    • Divide the batter between the paper cases.
    • Bake for 10-12 minutes or until golden and springy to the touch.

     

    • HONEY NUT RICOTTA WITH STRAWBERRY
    • Ingredients:
    • Ricotta Cheese - 200 gms
    • Honey - 2 tbsp or to taste
    • Roasted Almond - a handful
    • Strawberry - 12
    •  
    • Tip the ricotta cheese onto a large serving plate and drizzle with honey.
    • Sprinkle the almonds over and spread strawberries around the plate and start munching.
    • Though this item cannot be stored, but is easy to make and very nutritious for expecting mothers like you.

    Response : Recipe for Masala Peanuts:

  • Ingredients :
  • Roasted Peanuts - 1 cup
  • Onion, finely chopped - 1
  • Coriander leaves, finely chopped - 1/4 cup
  • Oil - 1 tsp
  • Salt - to taste
  • Ginger-Chili paste - 1 tsp
  • Lemon juice - 1 tsp
  •  
  • Method
  • Rub the peanuts between your palms so as to remove the skin and to break them into halves.
  • Mix all the ingredients.
  • This spicy peanuts goes best with cocktail and friends.

    Request 16 :  Can you please find out the way to make Gujarati Khaman. I am not asking for Khaman Dhokla....

    Response : First get your Khaman Dhokla ready. If you do not know, get the recipe in my free E-book titled "Gujarati Recipes". Once done, follow the following steps to have Khaman.

  • Do not add the tempering buttermilk or water to the dhokla.
  • Lightly crumble the dhoklas.
  • Garnish it with thin sev or bhujiya, coriander leaves and grated coconut.
  • Lightly toss them and Khaman is ready.

    Response : Good, I wish every hubby should take some interest in the process of cooking and should note that "Cooking Is Fun". Enjoy the following two recipes and surprise your wife.

     

    MUSHROOM OMELETTE

  • Ingredients : Per Serving
  • Eggs - 2
  • Milk - 1 tbsp
  • Salt - to taste
  • Green Chili, chopped - 2
  • Onions, finely chopped - 1/2
  • Button Mushroom, thinly sliced - 5
  • Coriander Leaves, chopped  - 1 tbsp
  • Ghee - 1 tbsp
  •  
  • Method :
  • Beat the eggs thoroughly. Mix all the ingredients together except ghee.
  • Heat ghee in a frying pan. Pour the egg batter into it and spread evenly.
  • Let it cook on medium flame for 1-2 minute or till light brown in color.
  • Flip over and cook for another 1-2 minutes.
  • Serve hot.
  •  

  • HERB CHEESE TOAST
  • Ingredients : Per Serving
  • Bread - 2 slice
  • Milk  - 1/2 cup
  • Oil - 1 tsp
  • Cheese, grated - 25 gms
  • Spring Onion, finely chopped - 1 tbsp
  • Green chili, finely chopped - 1
  • Salt - to taste
  • Pepper powder - to taste
  • Thyme - a pinch (optional)
  • Oregano - a pinch (optional)
  •  
  • Method :
  • Heat oil in a pan.
  • Saute the spring onions and green chilies for a minute.
  • Add salt and pepper and stir.
  • Lower the heat, add milk. Let it come to boil.
  • Add all the other ingredients and stir vigorously for 30 seconds.
  • Keep it aside.
  • Toast the bread slice on a non-stick pan on low flame for a minute.
  • Flip the side, spread the cheese mixture evenly.
  • Cover it with the lid and let it cook on low flame for 1-2 minute.
  • Serve it hot.
