1. Tomato Mint Soup

 

Tomato Mint Soup

     
  Ingredients :
 
  • Tomatoes, boiled – 3 large
  • Butter- 1 tbsp
  • Green Chili, chopped – ¼ tsp
  • Spring Onion and Carrot, finely chopped – 2 tbsp
  • Sugar -1½ tsp
  • Ginger Paste – ¼ tsp
  • Salt – to taste
  • Corn Flour - 1 tsp
  • Mint (pudina) leaves, finely, chopped - 5-6
  •  
      Method :
     
  • Peel off the skin of the tomatoes.

  • In a mixer add tomatoes and chili and make a fine paste.

  • In a pan add 1 tbsp Butter.

  • To this add the tomato paste.

  • Boil till red color is obtained.

  • Then add sugar, mint leaves, chopped spring onions, carrot and ginger paste.

  • Then add corn flour paste. Add salt.

  • While serving garnish with a few chopped coriander and mint leaves.
